At last, over many months of hard slog the Redburn Brewery is now up and running. We now have three beers that are regularly brewed, Ebrius at 3.7% abv, Summus at 4.4% abv and Optimus at 5.0% abv. The names are Latin to go with the history of the area the brewery is in, Vindolanda being only a mile or so across the fields.
Brewing in the old animal byre at the back of the house was not an easy choice, but it became the obvious one, and having a partly converted building still needing attention was the way to go (even though I am sitting here watching workmen on behalf of the water people struggling with a "mole" lost under the road as they are trying to put a new water supply in).
I have just brewed the winter beer, Viscum which is a five per cent dark and rich ale which will hopefully be ready in a couple of weeks or so, and of course I am having to go through the arduous task of tasting and quality control everyone has to do now and again. I hope to be able to brew some seasonal beers to go with the three regular beers starting with this winter ale. Other plans for the not too distant future are a small amount of bottling, mainly because bottled beer has always been an interest of mine, and the time and energy constraints are not the same as having to meet large volume demands. If I can squeeze in an alternative grain store then I might be able to do this ... but there are other things to concentrate on at the moment.
